Almonds can also be blended with water and strained to make a delicious, creamy nut milk.
It is recommended to soak your almonds for about 8-12 hours before eating them. Almonds are difficult to digest because of an enzyme-inhibiting substance in their coating.
The enzyme inhibitors protect the nut until it has the proper conditions for growing.
Soaking almonds overnight removes toxic enzyme inhibitors so that the enzymes secreted during digestion can do their job. Also the gluten breaks down, and digestion becomes much easier.
Add a little bit of Himalayan salt and they make a nice healthy snack full of nutrients, great on their own or in salads, muesli etc.
